Strawberry Muffin Recipe: Soft, Moist, and Bursting with Fresh Berries

  • 2 cups all-purpose flour
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup granulated sugar
  • 2 large eggs
  • ½ cup melted butter
  • ½ cup milk
  • 1 teaspoon vanilla extract
  • 1½ cups chopped fresh strawberries

Instructions

  1. Preheat oven to 375°F (190°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, beat sugar and eggs until light and frothy.
  4. Add melted butter, milk, and vanilla extract. Whisk until smooth.
  5. Pour wet ingredients into dry ingredients and gently fold together.
  6. Fold in chopped strawberries.
  7. Spoon batter into muffin cups, filling each ¾ full.
  8. Bake for 20-25 minutes or until a toothpick comes out clean.
  9. Cool in the tin for 5 minutes, then transfer to a rack to cool completely.

Notes

For extra flavor, add a teaspoon of cinnamon or a tablespoon of lemon zest.
