  • 1 can butter beans (or lima beans)
  • ½ cup red capsicum, finely diced
  • ½ cup green capsicum, finely diced
  • ⅓ cup purple onion, finely diced
  • 1 tomato, sliced
  • ⅔ cup parsley, chopped
  • ¼ cup kalamata olives, sliced
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon wholegrain mustard

Instructions

  1. Drain and rinse the butter beans well. Place them in a large mixing bowl.
  2. Finely dice the red and green capsicum. Dice the purple onion. Slice the tomato and chop the parsley. Slice the kalamata olives.
  3. Add all the chopped vegetables and olives to the butter beans. Mix gently.
  4. In a small bowl, whisk together the olive oil, apple cider vinegar, and mustard.
  5. Pour the dressing over the salad and toss well. Let sit for 5-10 minutes before serving.

Notes

For the freshest taste, let the salad chill for 30 minutes before serving. Add fresh mint or basil for extra flavor. Leftovers can be stored in the fridge for up to 2 days.
